Tips and Tricks

  • Chicken Breasts can vary greatly in size. If you have very large chicken breasts, cut them in half as if butterflying (cut open like a book) through the thickest part.
  • The Mayo and the Dijon add flavor and give moisture to the chicken breast. You can vary the amounts of each, but you want a total of 1 ¾ cups total. You do not want to use less than the amount shown. See substitutions if needed.
  • You can use the parmesan cheese in the green can or you can use freshly grated, either way, you’ll have great flavor.
  • You can use plain bread crumbs and simply mix in a tablespoon of Italian seasoning if you don’t have the flavored bread crumbs.
  • If using table salt instead of kosher salt, use half.
  • If using ground pepper (table pepper) use the same amount.

Substitutions

  • You can substitute boneless skinless chicken thighs and then cut the amount of mayo and dijon in half.
  • Any brand of mayo will work but do not use the lower fat mayo or miracle whip as both of these add more sugar and that’s not a flavor you want in this recipe.
  • A whole grain mustard will work instead of dijon but don’t substitute a yellow mustard or ground mustard in this recipe.
  • If you don’t have parmesan cheese, any hard cheese in that family will work.
  • You can use plain bread crumbs and then just add seasoning to them (about a tablespoon of italian seasoning will work).

Ingredients

  • 4 Boneless Skinless Chicken Breasts see notes
  • 1 Cup Mayo
  • ¾ Cup Dijon Mustard
  • ½ Cup Parmesan Cheese
  • ¼ tsp Kosher salt
  • ½ tsp black cracked pepper
  • ½ Cup Italian Bread Crumbs

Instructions

  • Preheat the oven to 350 degrees.
  • Cover a sheet pan with aluminum foil and spray with non-stick cooking spray. Set aside.
  • Cut the chicken breasts in half if they are large – see notes
  • In a medium sized bowl, mix the mayo, dijon, parmesan cheese, salt and pepper together until well blended.
  • Rub the chicken breasts with the mayo mixture and leave the mixture on the chicken as thickly as possible. Lay the chicken breasts on the aluminum foil covered baking sheet and spread out as much as possible on the sheet so that the hot oven air can circulate between them.
  • Sprinkle the bread crumbs over the top of the coated chicken breasts.
  • Bake the chicken for 15-20 minutes until done (will vary based on the size of the chicken breasts and how closely they are placed on the pan – they are done when they reach an internal temperature of 165 or when all juices run clear and the meat is white through the center).
