Traditionally, my husband and I have hosted a pretty big food planning event, ERRRR…. I mean, Super Bowl Party. This always signals to me 1) the days are about to start getting a LOT longer – Thank You Jesus! 2) Spring is almost here! See how my mind works, Super Bowl = almost Spring!
Making this Weeknight Easy Beef Stroganoff is reminding me how quickly time flies. The first time that I fixed this recipe was for a date – he turned into my husband. It doesn’t seem like that long ago, but had to be at least 11 years ago. He has been asking for this dish regularly ever since. Probably one of the reasons he “got serious” or “proposed!”. Lol. Well…. Maybe, who knows. (By the way, he commented that I could call this recipe “Proposal Stroganoff”. LOL!).

I have absolutely no idea where I found this recipe initially. I know I did not create it on my own. I am thinking I found it on the internet – but who knows – did we have internet back in those days? I’m kidding. Of course we did….. maybe.

Serving Suggestions for Easy Weeknight Beef Stroganoff
This Easy Weeknight Beef Stroganoff is great with a fresh green salad. That’s it! serve and eat – so easy!

- 1.25 lbs beef flank or sirloin steak – cut across the grain thin sliced
- 1 medium onion
- 4 oz fresh mushrooms – sliced
- 1 ½ cup water
- 3 Cups egg noodles
- 8 oz. velveeta
- 1 can peas or 1 Cup of frozen peas
- 1 Can cream of mushroom soup
- ½ cup milk
- 1/2 tsp salt
- ½ tsp pepper
- In a large skillet – brown the steak and onions on medium high x 4 minutes. Add mushrooms and cook for another 2-3 minutes.
- Stir in water and bring to a boil. Add the noodles and bring to a boil again. Reduce to simmer and cook x 7 minutes until the noodles are done.
- Add the other ingredients, simmer until velveeta is melted. Adjust salt and pepper to taste.
