TIPS AND TRICKS FOR ZESTY CUCUMBER TOMATO SALAD

  • Feel free to cut the cucumbers into disks, we simply find that cutting them into pie shaped pieces is the easiest to eat.
  • This salad works with either regular sized tomatoes or the cherry tomatoes, which are perfect if you are making this salad in the winter time.
  • If you don’t have garden fresh cucumbers, then please use the hot house cucumbers (the long ones at the grocery that are usually wrapped in plastic wrap)  the skin is much more pleasant on these cukes, but I still peel them.
  • Adjust the ingredients as you see fit, an approximation for this salad usually works. Experiment a little!

For you created my inmost being; you knit me together in my mother’s womb. I praise you because I am fearfully and wonderfully made; your works are wonderful, I know that full well. My frame was not hidden from you when I was made in the secret place, when I was woven together in the depths of the earth. Your eyes saw my unformed body; all the days ordained for me were written in your book before one of them came to be.”

This is a wonderful side to a Boston Butt roast and dinner guests all got the recipe. At least, the ladies did.

Thank you for the 'tip' about slicing, salting and allowing the cucumbers to sweat before adding all ingredients together. It answers my age old question about why the excess water in my salads? Thank you, thank you. Please excuse me now while I go and do my Happy Dance!
