Watermelon Fruit Salad

Ingredients

  • 1 Whole personal size watermelon
  • 1 Grapefruit segmented and then the segments halved
  • ½ Cup Olive Oil
  • ¼ Cup White Vinegar
  • ¼ Cup Sugar
  • ½ Cup honey
  • 2 Tbs Fish Sauce
  • ¼ Cup Lime Juice
  • ½ tsp salt
  • ½ tsp pepper
  • 1 Cup Salted Peanuts coarsely chopped
  • 6 Green Onions green part chopped - discard white part
  • 1 Cup fresh basil - cut into chiffonade.

Instructions

  • Cut watermelon into 1” cubes.
  • Cut the grapefruit into segments, remove the rind carefully removing all of the pith. Add this to the watermelon cubes and gently mix.
  • Mix together the olive oil, white vinegar, sugar, honey, fish sauce, lime juice, salt and pepper. Whisk well and then set aside.
  • Chop the peanuts coarsely and add to the watermelon bowl.
  • Add the green onions and basil to the salad and gently toss.
  • Just before serving, pour the dressing over and toss carefully. Serve immediately.

Notes

  • Cut your watermelon into bite sized pieces, no more than about a 1 inch cube.
    Be sure to avoid getting the white parts of the grapefruit rind in your salad, those are bitter.
  • Cut out the heavy skin between sections of the grapefruit if possible.
  • When making the dressing, it is important to taste it to see if it is sweet enough for you, if you notice that your watermelon isn’t that sweet, make the dressing sweeter.
  • A wonderful substitution for the olive oil is a blood orange olive oil (you can find this at specialty olive oil stores). Same for the vinegar, a grapefruit vinegar works perfectly.
  • This recipe makes quite a lot of salad and if you are serving this for only 2-4 people,
  • I would recommend cutting the amounts in half (except the grapefruit, its fine to use a whole one with half a watermelon).
PRO TIP: Although personal size watermelons tend to be about the same size, there is some difference, if you notice that yours is quite big, you will want to double or even triple the other ingredients. Likewise, if it is smaller, reduce the other ingredients.
