Equipment

  • measuring spoons and cups
  • Rimmed Baking Sheet
  • oven

Ingredients

  • 6 thin bone in pork chops
  • 1/3 Cup Soy Sauce
  • 1/4 cup vegetable oil
  • ¼ Cup Hoisin Sauce
  • Cup brown sugar
  • 2 Tbs Garlic
  • 2 Tbs Fresh Ginger - grated
  • 2 Tbs Rice Vinegar
  • ½ tsp Kosher Salt
  • ½ tsp black pepper
  • ½ tsp red pepper flakes
  • 1 yellow onion - cut in half top to bottom and then into thin slices

Instructions

  • In a zip top storage bag place the bone in pork chops.
  • In a medium sized bowl, use a whisk or fork and mix all of the other ingredients except the onion together. Pour these mixed ingredients over the top of the pork chops and close the bag after squeezing as much of the air from the bag as possible. Mix the ingredients around to coat all of the pork chops.
  • Place the bag in the fridge for at least 2 hours up to 24 hours.
  • When ready to cook the pork chops, preheat the oven to 300.
  • Place aluminum foil on a rimmed baking sheet. Spread half of the onion onto the baking sheet. Remove the pork chops and place onto the onion and then place the rest of the onion slices on top of the pork chops. Pour the liquid from the bag onto the baking sheet.
  • Place the pork chops in the oven in the center of the center rack.
  • After 10 minutes, increase the temperature to 350.
  • Pork chops are done when they reach an internal temperature of 165 or when you cut into the thicker pork chops and notice no pink meat.

Notes

  • You’ll notice that some of the pork chops are probably thicker than others. You’ll want to test the thicker pork chops for doneness. The thinner pork chops will be done quickest.
  • The marinade is what keeps the pork chops moist so be sure to add it to the pan.
  • Do not use any unused marinade on the finished product.
Substitutions
Thin Pork Chops - You can use this same marinade with a thicker cut pork chop, just cook the pork chops longer until they reach the correct internal temperature.
Garlic Powder - You can use fresh garlic, but you’ll need about 6 cloves minced or 2 Tbs minced garlic in olive oil.
Soy Sauce - It’s fine to use the lower salt soy sauce or Braggs Sauce
Vegetable Oil - Any cooking oil will work here.
