Easy Weeknight Beef Stroganoff

This easy one dish easy weeknight beef stroganoff will feed a hungry family in a hurry. Simply serve with a green salad.

Ingredients

  • 1.25 lbs beef flank or sirloin steak – cut across the grain thin sliced
  • 1 medium onion
  • 4 oz fresh mushrooms – sliced
  • 1 ½ cup water
  • 3 Cups egg noodles
  • 8 oz. velveeta
  • 1 can peas or 1 Cup of frozen peas
  • 1 Can cream of mushroom soup
  • ½ cup milk
  • 1/2 tsp salt
  • ½ tsp pepper

Instructions

  • In a large skillet – brown the steak and onions on medium high x 4 minutes. Add mushrooms and cook for another 2-3 minutes.
  • Stir in water and bring to a boil. Add the noodles and bring to a boil again. Reduce to simmer and cook x 7 minutes until the noodles are done.
  • Add the other ingredients, simmer until velveeta is melted. Adjust salt and pepper to taste.
