Notes

  • This recipe calls for Chardonay, if you are opposed to using wine in your dish, use added chicken stock instead.
  • When you are first trying this recipe, it seems a little overwhelming. It isn't. Just put your ingredients out where you can reach them and remember the recipe in terms of basic steps. Create the sauce first, cook the wine and other ingredients down by half, add the tomatoes, add the ham, add the cheeses and throw it in the oven. It's really that easy.
  • Juniper berries add a special flavor to this dish and really set it off.
  • You'll want to use a pasta that has plenty of little grooves to catch the sauce. That's a special treat.
  • Save some of the pasta water. If your tomato sauce isn't as thin as you like, add pasta water 1/4 cup at a time until it is as thin as you prefer.
