Nashville Hot Chicken Wings

It's almost time for the Tennessee Titans to take the field! I know ya'll didn't peg Loaves and Dishes for a football site - but we gotta be IN THE KNOW about football food - don't you think? What could be hotter for Nashville's own Tennessee Titan's opening day tailgating than Nashville Hot Chicken Wings? Ummmm.... nothing. Absolutely NOTHING is hotter than Nashville's Hattie B's wings - so we won't quite go there but these are hot enough to hollar "TOUCH DOWN FOR THE TITANS!".

While the original Nashville Hot Chicken is brined and deep fried, I had to think of a better way for tailgating, don't you think so? I mean, who wants to do a bunch of deep frying and then head out to the big game? What a mess to come home to!! Instead, I opted for the flavor without the mess. Quick and Easy and tasty too! What could be easier than just coating these wings up and slipping them in the oven? Nothing! Bonus:  Baked NOT Fried! You absolutely can do this recipe before the big game day and then head out to delight your friends with your very own Nashville Hot Chicken Wings! Don't forget the bread and pickles though, those are absolutely necessary for authenticity!!

Ingredients

  • 4 lbs chicken wings – cut at the joint wing tip discarded (the typical large pack at the grocery)
  • 2 Tbs Baking Powder the kind with NO Aluminum
  • ¼ teaspoon table salt
  • ½ teaspoon cayenne pepper
  • 2 Tbs brown sugar
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika

Instructions

  • Preheat oven to 250. Make sure the oven racks are on the upper third of the oven and the lower third of the oven. Cut the wings at the joint – discard the tips. Dry the wings pieces well with paper towels.
  • Place all of the wing pieces, the baking powder, the table salt, cayenne, brown sugar, chili powder, garlic powder, paprika, into a resealable plastic bag, seal and then shake until all of the pieces are evenly coated with baking powder.
  • Evenly space the wings out on a baking wire rack (see photos) in a rimmed baking sheet so that the hot air can circulate all the way around the wing during baking. Line the bottom of the rimmed baking dish with aluminum foil or parchment paper (for easier clean up).
  • Place the baking sheet on the bottom rack of the oven and bake for 30 minutes at 250. After 30 minutes increase the heat to 450 and move the wings to the bottom rack in the oven. Bake for another 30-45 minutes. When done – the skin will be golden brown and the meat will have no pink color – juices will run clear.
  • Remove the rack from the oven and let rest for 5 minutes. Serve with pickle and white bread

Notes

For less heat, leave off some of the cayenne

    Do you place the pan on the top rack at 250 and bottom at 450? The recipe says bottom rack for both temps.

    With all the recipes I've been seeing for chicken wings I need to get over my dislike for this piece of chicken! But, I have to say your recipe looks good, and the additional links are very helpful. Pinned. Thanks for sharing. Take care.

      Hi Mary! If you don't like chicken wings - then DEFINITELY don't get over it! Lordy - if I thought I had to get over my dislike for lima beans I would be beside myself! lol. We'll just fix something else next week! (I have some delicious sweets coming that are super easy to fix and even easier to eat!!). Have a wonderful weekend my friend!
