Old Fashioned Chocolate Pecan Pie
To make this recipe we are adding two essential ingredients to take this pie to the next level. We are adding Dutch-processed cocoa powder for a rich chocolate flavor.
We are also adding a bit of bourbon for a spiced touch!
To make this pie even better, add a dollop of whipped cream or vanilla ice cream on the side. This Old Fashioned chocolate pecan pie is easy to make and will be a holiday hit.
Ingredients
Dry Ingredients
Brown Sugar – brown sugar is regular white sugar with added molasses. The pecan pie will have a richer flavor than just white sugar can provide. By adding the molasses we are adding another layer to the flavor profile
Flour – for the recipe, we are adding just a bit of flour to help thicken the pie, and to give the top a nice sheen.
Salt – We add salt to our pie to help bring out the other flavors! Trust me you want to add a pinch of salt to your desserts.
Cocoa Powder – the cocoa powder is what is responsible for the chocolate in this Old Fashioned Chocolate Pecan Pie. You could use melted bittersweet chocolate chips. I find that cocoa powder works better and mixes better with the other ingredients.
Wet Ingredients
Egg – eggs for this pie act as a binder, and will help hold all the ingredients together.
Dark Corn Syrup – corn syrup will add another layer of sweetness, and moisture, and will help darken the color of the pecan pie.
Melted Butter – In this recipe, we use melted butter to help with mixing. We will also bloom the cocoa powder in the butter. By blooming the cocoa powder we ensure that the pie will have a rich, and deep chocolatey flavor.
Vanilla Extract – I am a firm believer that you can’t have a dessert without a little vanilla extract. It just adds complexity to the flavor! I also prefer to use imitation vanilla extract. You can use any type of vanilla that you have in your pantry. I read a really interesting book that touched on this topic, called Eight Flavors!
Bourbon – We use bourbon a lot in baking because it adds more layers to the flavor of certain desserts. Bourbon is a spicy alcohol that has a lot of dessert applications!
Add-Ins
Pecans – We are using pecan halves, and chopped pecans for this pie. Using both kinds of pecans helps the texture of the pie, and adds interest! You can save a little money by chopping the pecans yourself.
Pie Shell – We are using a store bought pie crust for this recipe for simplicity. I prefer the Pillsbury brand pie crust. You could make a homemade pie crust if you prefer.
How to make Old Fashioned Chocolate Pecan Pie
Bloom the Cocoa Powder – we are using melted butter to bloom the cocoa powder. This is because the bloomed cocoa powder has time to dissolve and develop a richer flavor.
Mix Flour, Sugar, and Salt – We mix these up first because we want to evenly distribute them throughout the pie.
Add Eggs – add the eggs one at a time. You will be able to mix them better and make sure there aren’t any shells in your pie.
Add Wet Ingredients– Next, we add corn syrup, melted butter and cocoa mixture, vanilla, and the bourbon.
Mix in Pecans – we add the pecans last to keep them from breaking apart. You can save a little bit of money by buying the pecan halves and chopping some yourself.
Bake – We bake this Old Fashioned Chocolate Pecan Pie for about an hour. Or until the center of the pie jiggles just a little bit.
After – let the pie come to room temperature before covering with plastic wrap or aluminum foil. You can store this pie on the counter for about 3 days or in the refrigerator for 1 week.
Tips and Tricks
You’ll want some pecan pieces and halves to make your pie just right. About half pieces and half halves usually work!
I prefer the dark Karo for this recipe, but you can use the light and it will taste just fine.
You could add a pinch of cinnamon, or some orange zest to add more flavor.
If your pie crust is browning too fast, cover it with aluminum foil. This will help prevent further browning.
Give the pie a slight shake. The pie is ready when it jiggles slightly. If it jiggles a lot, give it another five minutes and try again.
The better the bourbon out of the pie, the better it will be in the pie. Use a higher-quality bourbon for more flavor.
You don’t need to worry about parbaking the crust. Parbaking is optional but it may over-brown the crust.
You can keep this pie in the freezer for up to 1-3 months. You need to make sure that it is in an air-tight container. This will keep the pie from getting freezer-burnt.
