This recipe calls for thighs because they are more forgiving when cooking them and because they are more flavorful. You can use breast meat but you’ll find that it isn’t as juicy and doesn’t hold up to rewarming like the thighs do.

Yes, absolutely! If your grocery has it, it’s fine to use canned mango (my grocery doesn’t carry it). Just drain the juices from the mango before adding to the pan.

How Do I Know this Dish is Done?

This dish is done when a thermometer put into the centers of the chicken registered 165. The chicken is cooked through and the juices are clear.

Ingredients

  • 4 lbs chicken thighs boneless skinless
  • 2 tbs oil
  • Salt and pepper
  • 2 mangos ripe, chopped with skin removed
  • 15 oz can chopped pineapple with juice
  • 2 Tbs garlic minced
  • 6 stalks green onion (1 bunch) chopped
  • 20 oz Very Teriyaki marinade 1 whole bottle

Instructions

  • Chop chicken thighs into bite sized pieces
  • Heat 2 tbs oil in pan. Add chicken when pan is hot. Spread the chicken out so that it can brown instead of steam. Season with salt and pepper. Cook for 2-3 minutes per side.
  • Remove chicken and set aside on a plate.
  • Deglaze pan with pineapple juice from can. Scrape bottom of pan to remove the stuck on bits of chicken and the browned areas on the pan. Use spatula to scrape the areas.
  • Add 2 chopped mangos, add pineapple. If the mango is a bit firm, allow it to cook a bit (2-4 minutes) before adding the pineapple.
  • Add cooked chicken, chopped green onions, and very teriyaki marinade. Cook until heated through and until the chicken is at an internal temperature of 165.
  • Remove from heat and serve over rice.
