Southern Sun Drop Pound Cake Recipe

So easy with box lemon cake mix, instant lemon pudding, add sundrop soda and a delicious cake recipe results in sundrop pound cake! YUM! Perfect for family reunions, valentine’s day or just with a cup of coffee!

You’ll notice that this is a very moist cake and that the center of the cake I have here is a little heavy (why you don’t see many cakes at Loaves and Dishes). It’s a very simple recipe and one that our family loves!

As the official cake tester at my house and having grown up in Ohio, I can confirm that this sundrop cake also works if you only have Mountain Dew available. 

Here’s What You’ll Need

For the Cake, dry ingredients

  • Citrus soda, soft drink
  • Lemon Cake Mix or box yellow cake mix
  • Lemon Pudding Mix

For the Top of the Cake Icing

  • Lemon Extract
  • Powdered Sugar (cup of confectioner sugar)
  • Cream
  • Butter

Here’s How You Do It

  1. Combine cake mix plus the melted butter in a large bowl. 
  2. Pour the batter into a prepared pan.
  3. Mix up the icing with a cup of confectioners sugar, teaspoon of vanilla extract, almond extracts and lemon extracts with the heavy cream and pour over the warm cake to cool on a wire rack

Special Equipment

No need for an electric mixer with a paddle attachment, but you will want a large mixing bowl, a rubber spatula (to scrape the sides of the bowl) and perhaps a bundt cake pan. I like to make mine in a bread pan, but that is entirely up to you!

Tips and Tricks

  • This southern sun drop pound cake is best when kept in the refrigerator, but it can be kept at room temperature for a few hours. 
  • Store in an airtight container for best results.
  • Place on a wire rack until the cake cools. 
  • If you prefer a cream cheese frosting instead of the glaze recipe I’ve included, that will also work with this cake (just add a little lemon juice!)
  • You can make a cherry lemon sundrop cake by adding cherry sundrop! 
  • If you do not have access to sun drop, use Mountain Dew instead.
  • Be ready to mix the cake and put immediately into the oven, so allow oven to preheat first.

Can I Use a Different Soda?

You can use a different soda, but it will change the taste of the cake and then you won’t have a sun drop cake. Mountain Dew is probably the closest in taste.

Do I make the pudding into pudding before adding it?

No, add the pudding mix powder directly to the cake.

Can I Freeze This Cake?

Yes, you can freeze the cake and it will keep for about 3 months very well.

How Long Does This Cake Last?

If you keep it in the fridge, it will last for about 5 days if covered.

Ingredients

For the Cake

  • 1 box lemon cake mix
  • 1 ¼ cup sun drop
  • 1/4 bag lemon instant pudding mix

For the Glaze

  • 1 Cups Confectioners Sugar
  • ¼ tsp lemon extract
  • 1 Tbs butter melted
  • 1/2 Tsp vanilla extract
  • 1/4 tsp almond extract
  • 1 pinch salt
  • 1/4-1/2 Cup heavy cream

Instructions

For the Cake

  • Prepare a loaf pan or small bundt pan with non stick spray and set aside. Preheat the oven to 350. Set the racks so that there is one in the middle of the oven.
  • In a large or medium bowl, mix together the cake mix and the sun drop and pudding mix. Mix well and pour the batter into the cake pan. Place into the hot oven immediately.

For the Glaze

  • Mix the confectioners sugar, lemon extract, vanilla extract, almond extract, melted butter and a pinch of salt
