There are different types of egg washes and egg wash mixture s so don’t worry that you’ll do it wrong, you won’t! 

What Is the Purpose Egg Wash?

An Egg wash is a beaten egg (white or whole) or a mixture of beaten egg and water (or you can use milk or cream), that is brushed onto the top of pastries and doughs before baking. The egg wash provides a golden brown, shiny finish like you see on bakery items.

Usually an egg wash is only for the shiny golden appearance, but it also helps raw sugar stick to the surface of pie dough and brings baked goods to the next level.

Egg wash is also pre baked onto the bottom surface of a pie shell to help prevent a soggy bottom.

What You’ll Need

  • A large egg
  • A bit of water
  • Natural bristle brush (traditional pastry brushes) or silicone pastry brushes
  • A small bowl
  • A fork for whisking or a small whisk.

*** No worries if you don’t have any brushes, the back of a spoon will work just fine.

  • Sugar crystals or raw sugar

How to Use an Egg Wash? 

Use on any type of pastry dough where you want to brown the edges of pastry. For example: hand pies, pumpkin pie edges, rolls or any type of upper pie crust. 

Pro Tips

Make sure that your egg wash is very well mixed or it creates an uneven shine on the finished product. As an example, my egg wash wasn’t very well mixed in these photos for “How To Freeze Apple Pie“. You want to avoid that uneven and lumpy shine. 

Your pastry will taste just fine without an egg wash. The best way to give a finished professional look to your work is by using an egg wash, and this is probably the easiest and most basic egg wash out there.
